How to Feed Veggies to Kids? Try these VEggie NuggetS

Kids can be really fussy and picky when it comes to eating veggies. Mothers normally struggle with this issue and are looking for ideas to feed veggies to their kids. Well these VEGGIE NUGGETS are my tried & tested recipe & are approved by my 4 yo😁 All kids like crunchy and crispy nuggets so they will gobble down veggies without even knowing it 🤫 Even adults would like them if you adjust the spices accordingly.

This is such an easy, quick and healthy recipe. These nuggets are a good and cheap alternative to store-bought ones. You can make them in advance & freeze them for later use.

Yields 20-25 medium-sized nuggets
Ingredients
500 g Boiled Potatoes*
200 g (5-6) Broccoli Florets
1 Large Carrot
2 Tbsp. Coriander
1 tsp. Salt
1 tsp Black Pepper
1/2 tsp. Red Chili Powder*
1/2 tsp. Garam Masala Powder*
1 small Egg (beaten)

*Omit these if your kids do not like spicy food

Ingredients for Coating
1 Egg (beaten)
1 Cup Breadcrumbs
1 Tbsp. Oregano
Oil for frying

Method
Boil potatoes and mash them coarsely with a fork. In a grinder, add carrots, broccoli, coriander, spices and grind to a fine powder (You can any add veggies of your choice). Then add these ground veggies into the mashed potatoes. Slowly add beaten egg and mix until the mixture is soft enough to from a ball. At this point, do a taste test and adjust spices accordingly.

Now take some mixture to form a ball. Flatten it with your palm and use any cookie cutter to cut into your desired shape. I used a star cookie cutter. You can make balls or small flat kebabs if you like. To get my son excited to try these nuggets, I used a star shape. Repeat this process until all mixture is used. Now add breadcrumbs and oregano in one bowl and beat egg in another bowl. First dip each nugget in egg and then coat with breadcrumbs (If nuggets are too soft, you can put them in freezer for 30 minutes and then do egg and breadcrumb coating). At this point, you can either fry them or freeze them in air-tight containers. To make sure they don’t stick to one another, put a sheet of baking paper or cling film in between the nuggets before storing them in freezer. When you want to make them, fry on high flame until nuggets are golden. Serve with ketchup or mayonnaise.
