Do you have guests coming over and want to make a quick dessert? Try this pineapple dessert that is ready within minutes. It’s really easy yet absolutely delicious. I have tried it many times and it definitely is a crowd pleaser. This recipe yields 3-4 servings.
Ingredients
1 small tin of Pineapples
1 cup Heavy Cream
1 packet Instant Pudding
2 Tbsp. Powdered Sugar
8-10 Coconut Biscuits
Method
First of all drain the pineapples in a bowl and crush them in a blender (Be careful no to grind them too much, they should still be a bit chunky). Also save the pineapple juice as we would be using it later. Crush coconut biscuits in a zip lock bag. If you can’t find coconut biscuits, take any plain butter cookies and add crushed coconut in them.
Now add chilled heavy cream in a bowl and beat with a hand-mixer on high speed for a few minutes until it becomes a bit thick. Then add powdered sugar in cream and beat until soft peaks are formed (it should hold it’s shape). In a separate bowl, add crushed pineapple, instant pudding mix and whipped cream and mix until well combined. At this point, taste and adjust the sweetness according to your liking.
To assemble the dessert, add crushed biscuits to the bottom of your serving jars. Add a tsp of pineapple juice on top to add flavor to the biscuits. Then add the prepared pineapple cream on top. Whenever I make single serving of desserts, I always use a piping bag as it creates clean layers and is not messy. Finally, decorate with whipped cream and garnish with pineapple chunks, coconut flakes and mint leaves. Set in fridge to refrigerate for about 30 minutes and then serve. Enjoy!
